Fresh


...from yesterdays farmers market.

Warm Vege and Quinoa Salad
- Grill eggplant, pepper and mushrooms in olive oil
- Steam some brocolli
- Cook quinoa (presoaked)
- Toss all the above together with torn spinach, chopped tomato and fresh pesto.

Eat while still warm. Yum!

Sounds delicious and so healthy! We absolutely love quinoa in our home. I saw the post with your bounty from the farmer's market- I so wish that we had a good market in easy driving distance!

Thanks! I used the fresh pesto from the market yesterday for a dressing (oh and also added a bit of lemon juice - forgot to put that in the recipe) but you could use whatever you wanted to.
